This heliogravure presents the Mariahof bull, a powerful representative of the Austrian alpine breed known for its strength, endurance, and suitability for mountainous farming. The composition centers on the bull’s strong musculature and erect posture, while the surrounding landscape—with grazing cattle and a wooden fence—anchors the animal in its natural rural environment. This plate (Pl. LII) comes from the monumental zootechnical series Les races bovines au concours universel agricole de Paris en 1856, which catalogued key European cattle types through early photographic and printing technologies.
Emile Baudement (1821–1862) was a French zootechnician and agricultural writer who played a key role in the 19th-century classification of livestock breeds. His major work, Les races bovines, compiled systematic studies of cattle presented at the 1856 Universal Agricultural Competition in Paris. Baudement’s contributions combined empirical observation with state-supported research and helped lay the groundwork for modern animal husbandry in France.
